Stir in boiling water (batter will be thin). Chop the chocolate and place it in a heat-proof bowl set over a pan of simmering water. Stir until just melted and set aside until cooled to room temperature. In the bowl of an electric mixer.

- Preheat oven to 180°C. Grease and dust 2 baking tins with butter and cocoa powder (if you only have one tin, bake the batter in 2 separate batches)

- Whisk together eggs, milk, sugar, oil, vanilla and boiling water.
- Add the dry mixture into the wet mixture in batches and whisk continuously. The consistency of the batter should be runny.
- Place your batter into your tins and bake in the oven for 30-35 minutes or until a toothpick inserted comes out clean.
- Cool the cake inside the tin for 10 minutes and then remove to finish cooling on a wire rack.
- For icing, whisk together icing sugar, cocoa powder and butter, slowly adding milk to your desired consistency.
- Ice the cake when it has cooled down completely. You can make a layered cake or keep it as 2 single cakes.
